Ingredients
- 1lb cooked Italian sausage links, sliced into ½ inch thick rounds
- 1 yellow onion, chopped
- 1 Tbsp of extra virgin olive oil
- 3 cloves of garlic, minced
- 1 Jar of Pirro’s Marinara Sauce
- 2 cups of Water
- 4 cups or 32oz of Chicken Broth
- 1 tsp of crushed red pepper flakes
- ¼ tsp of ground black pepper
- 1 bag (12-20oz) of cheese tortellini pasta
- 1 can of white beans, drained
- 8 oz of Baby spinach
- ½ cup of grated parmesan cheese, for serving
How to Make Tuscan Tortellini Soup
- Place oil in a large pot over medium heat. Add the chopped onion and garlic, cook until soft.
- Add sausage into the pot and cook.
- Stir in Pirro’s Marinara Sauce, broth, water, red pepper flakes, and pepper.
- Once stirred, bring to a boil
- Stir in the white beans approximately 2-3 mins.
- Add the tortellini to the boiling pot and reduce heat to a medium-low temperature. Let simmer and cook for 8-10 mins.
- Add baby spinach and cook until the spinach has wilted.
- Ladle soup into serving bowls, topped with parmesan cheese and serve.
