Zucchini Roll-Ups

This carb/gluten free recipe is so easy and makes for the perfect appetizer or healthy snack! So simple yet so yummy, also very pretty presentation, what more could you ask for!

Ingredients:

  • 8 oz. whole leaf spinach
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 24 oz. jar of Pirro's Marinara
  • 16 oz. ricotta cheese
  • 2 zucchinis
  • 3 cups parmesan cheese plus additional for garnish

Chop spinach mix with ricotta cheese. Add 1 tsp. of salt and 1 tsp. of pepper. Stir until thoroughly mixed.  Cut off ends of zucchinis. Using a mandoline, slice zucchinis lengthwise into 1/4 inch slices. Blanch sliced zucchini for approx. 5 minutes to make easier to roll.  pour and spread 1 24 oz. jar of Pirro's Marinara to glass bakeware. Spread approx. 3 tbsp. of ricotta mixture into each zucchini slice and roll up lengthwise, keeping tight but not allowing for the mixture to spill out. Arrange roll-ups in rows on bakeware and top with parmesan. Place in oven at 350° for 6-8 minutes or until parmesan begins to melt. Take out of the oven and garnish with parmesan! Godere!
