Salmon in Vodka Sauce

The best thing about this recipe is that it tastes like it took hours to make. Really, it just takes 15 minutes! Enjoy tender poached salmon cooked in a creamy sauce of caramelized onion and chunky Pomodoro Tomatoes with a touch of herbs, garlic, and scallions. Yup, it only takes 15 minutes.

  • Fresh salmon, skinless 20-24 oz. (skinless chicken breast or broccoli are good substitutes)
  • Salt
  • Pepper
  • TBS olive oil
  • 1 jar of Pirro's Rustic Vodka Sauce
  • Fresh baby spinach


Wash and cut salmon into 5-6 oz. portions. Lightly season salmon with salt and pepper. Pour one tablespoon of oil olive in a 16" sauté pan. Place portioned salmon skin down in a hot pan. Wait 2 minutes and pour Pirro's Rustic Vodka Sauce over salmon. Reduce to simmer and cover for 4 to 5 minutes. Add spinach, which should wilt by the time the salmon is cooked. Check the texture of the salmon with a fork until it reaches desired firmness.

Spoon any leftover sauce in the pan onto the salmon. Serve immediately and enjoy!
