Baked Portabello Mushrooms

These cute little portabello pizzas are the perfect snack or light meal! Packed with protein and fiber, the mushrooms make for an amazing alternative to pizza crust. Try these out and let us know what you think!

Ingredients:

  • 2 Large Portabello Mushrooms
  • 12 Oz. Pirro's Bolognese
  • 4 Oz. Ricotta
  • 2 Oz. Sundried Tomatoes
  • 1 Oz. Basil
  • 1/4 Tsp. Salt
  • 1/4 Tsp. Pepper
  • 1 Oz. Parmesan

Clean each portabello mushroom and cut off their stems, leaving just the top of the mushroom. Bake each for 10 minutes. Chop basil and mix with ricotta. Add in salt and pepper and stir until all ingredients are thoroughly mixed. Spread ricotta mixture over the two portabellos evenly. Top with sundried tomatoes. Spoon Pirro's Bolognese over the mushrooms. Top each with parmesan. Bake for 10 minutes. Switch to broil and leave until parmesan begins to get a nice golden color. Take out and garnish with basil.
